Why do good [food] business fail and mediocre ones succeed?

Hi everyone!

Recently, lumipat ako ng address na malayo sa previous location ko. Since minadali ko ang pag lipat ko, may mga bagay ako na hindi muna pinaglaanan ng budget, isa na dun ang pagbili ng cooking equipment since gusto ko din maexplore yung mga food options sa nilipatan ko. May isang small restaurant akong nakainan na nagustuhan ko talaga kaso nagsara siya after a few months kahit isang taon na siyang nagooperate. Nasa main road siya nakapwesto pero medyo maglalakad ka pa ng konti mula sa center nung village. May mga restaurants din sa center ng village kung saan nadadaanan ko muna bago umabot dun sa favorite kong kainan, and hindi naman sa sinisiraan ko sila (hindi ko din naman imemention yung mga food joints na yun) pero kahit mas malapit sila, mas pipiliin ko parin na maglakad pa ng extra 5 minutes para lang kumain dun sa preferred restaurant ko. Sa nakikita ko, bihira lang din talaga yung kumakain dun sa restaurant na yun compared dun sa mga nasa center ng village, pero nagtataka ako kung bakit mas pinipili ng tao na tangkilikin yung mga mediocre food joints na yun kesa dun sa nagsara na gusto ko. Nakikita ko na madalas pa na mga de-kotse ang kumakain dun.

Para lang may idea kayo sa scenario ng mga food joints dito sa village na tinitirahan ko ngayon:

Liempo Joint - Ito yung nagsara na gusto kong restaurant (hindi ito yung name nung restaurant pero liempo kasi yung pinakanagustuhan ko sa kanila). Marami silang selection, nasa 70-80 pesos per order. Yung liempo, 80 pesos pero ang serving, parang kalahati na ng tig 150-180 na liempo na binebenta sa mga stalls na nagbebenta ng litson manok at liempo. Panalo pa yung sauce nila, hindi ko ineexpect na bagay pala sa liempo ang shawarma sauce na puro sibuyas. Mapapa-extra rice ka dito sa dami ng ulam. Grilled quarter chicken leg-thigh part 80 pesos din, ang mura diba? Sakto ang seasoning ng mga luto and generous ang serving. May parking space sila lalo na sarado na yung mga katabi niyang establishments pag gabi.

Deep Fried Joint - Ito naman yung nasa center ng village na nagseserve ng mostly deep-fried na pagkain. Yung una kong inorder ay cheesy beef, worth 85 pesos. Ang kasama dito ay isang iced tea tsaka fried rice (na honestly walang lasa). 65 pesos naman ito kung plain rice lang at no iced tea. Nung inorder ko ito, ineexpect ko na parang ground beef na may melted cheese. Ang dumating sakin, around 20-30 grams ng groun beef na nakabalot ng lumpia wrapper na triangle ang shape. Hindi ko din nalasahan yung cheese tapos kahit konti lang yung rice, una paring naubos yung ulam. Sobrang disappointed ako sa sinerve sakin, mas sulit pa kumain sa karinderya actually. Hindi ko inexpect na ganun ang iseserve kasi wala namang pictures yung food nila. 2nd time kong kumain dun, wala na din kasi akong choice at sarado na yung gusto kong kainan, inorder ko naman ay chicken fingers, 85 din ang presyo para may iced tea and fried rice, baka sumablay lang kasi nung una kong kain. Pero grabe, ang sinerve sakin ay 4pcs na kasing haba at lapad pero parang kalahati lang ng kapal ng middle finger ko. May kasamang itlog na sunny side up ang luto bukod sa fried rice at iced tea.

Ang tanong, bakit nagsara yung liempo joint, even though nasa main road siya na nadadaanan naman ng tricycle bago umabot ng center ng village (kaya impossible na hindi siya makilala) pero hanggang ngayon ay buhay parin yung deep-fried food joint? Parehas na may parking sila, pero sa dalas kong kumain dun sa liempuhan, minsan lang akong may nakakasabay na kumain dun compared sa deep-fried joint na napupuno pa ang parking sa dami ng kumakain. Mabait yung staff na nagbabantay sa liempuhan, compared sa parang walang feelings (hindi ata uso sa kanila ngumiti e) na staff nung deep-fried joint. I doubt na price ang issue lalo na kung mga de-kotse pa kumakain dun sa isa. Kung may kotse ka, walang wala yung 5 minute WALK papunta dun sa mas masarap na kainan naman siguro? Pero bat ganun? Hindi ako affiliated with either businesses, hindi ko nga alam yung name ng staff sa liempuhan kaya hindi ko alam kung lumipat ba sila or kung ano reason ng pagsara nila so hindi ako biased pagdating dun. I just want ideas kung bakit nagfefail ang mga good businesses as opposed to mediocre businesses. May isa pa kasi akong experience na similar sa ganito pero sa sunod ko na isheshare hehe. Kadalasan quality at taste ng food ang dinadayo sa isang kainan.  Secondary na lang ang price and attitude ng mga staff.

Word of mouth na ngayon at quality over price ng food ang labanan when it comes to Food business. I have a friend that started food business last year(He was a former chef on a cruise ship). You can search in Didays Lechon located at Mandaluyong.I was one of invited on their first day of opening. I never really thought na bigla ito lalaki in a matter of short time. Only a matter of time na nadiscover sya ng isang group of food bloggers. Then it started to make a lot of orders day by day even the Mandaluyong City Hall that is near on their resto ay nagoorder din sa kanila. Though maliit ang area ng Kainan nila. They plan to have expansion and their skyrocket popularity results to BIG invesment.

There are things na intangible na I think can make a difference, like ambience ng lugar, yung crowd, etc. My brother have a sarisari with barbeque in their village and sila ang pinupuntahan ng tao though hindi sila sa pinaka center ng village nila.Baka kasi yung mga buyers eh dun din bumibili ang friends nila so they long for a friendly and familiar crowd or whatever. I really don't know, it bugs me too when I see something like what you observed. May "kakaiba" sa ibang lugar/store eh..na mahirap ipaliwanag minsan.

It all depends on the marketing strategies, accessibility and the welcoming environment of the food business. Actually, most of the population that consume this stuff are of middle and lower income levels, who prefer smaller food joints that are more affordable and welcoming. And of course most large ones happen to be exclusive, so....

The ability of a business to flourish is far from dependent on its size. Small businesses offering high quality service, with very good customer care, reliable food ordering and delivery system in place and have high standards of hygiene will definitely do better than big food businesses with poor service
